my first homemade lasagna!

So... having a baby is not easy on the figure. Yeah, it's not what it used to be and that's ok. I have the battle scars to show for it and my sweet baby girl. I would take a million more stretch marks for her. No doubt about that! But, I do want to keep any added pounds off and tone up. I started with working out. Honestly, I haven't followed through like I said I would but I'm going to get back on track once I kick this cold. But the next step was making better food choices. Charity let me borrow her book, Naturally Thin by Bethenny Frankel (from the Real Housewives of NYC). Her book makes so much sense in regards to eating right and living a healthy lifestyle. If you haven't read it-- I would recommend it! Throughout the book, Bethenny shares healthy recipes and she also has a cookbook. I found a lasagna recipe on her website that I decided to try out yesterday (http://www.bethenny.com/2010/05/12/classic-bolognese-lasagna/).

These were my concerns:


1. It's a healthy recipe. Is it going to taste good???


2. I have never made lasagna. Ever. Will it even be edible even if it was supposed to taste good???


Well, I put my concerns aside and decided to give it a try. I went to Wal-Mart to get the ingredients and then began the prep. Prep went well... it looked like lasagna... let's see how it tastes when it comes out of the oven. I eagerly awaited Josh's arrival home so that we could try it out together. I made him taste it first because if it was nasty, I could just throw it away and we could head to Taco Bell. But guess what?!

It was good. I mean REALLY good! I was so proud of myself. Usually when I attempt to follow a recipe, I fail at it. But not this time. I made some freakin' delicious homemade (even healthy) lasagna!

This recipe is definitely worth trying. Mmmmmm!
